Woks are useful for more than just stir frying foods. When you need a pan large enough to tackle a meal for a crowd, a wok is up to the task. These versatile pans can be used for anything from re-creating Chinese takeout at home to whipping up your favorite brunch dishes on weekends.

Although cooking in a wok is normally done over a flame or on the stovetop, a number of electric woks are now available at cooking stores and online. Are these pans just as good and functional as regular woks, or should you skip the electric model and stick with a traditional pan?

What is an Electric Wok?

An electric wok is a wok with its own heating element built into the design of the pan. Instead of being used on the stove, electric woks are plugged in and can be used for cooking on the countertop, on a kitchen island or even at a large table. Pans typically measure about 14 inches and can be heated to reasonably high temperatures, with some models reaching as much as 500 degrees. However, most models average between 300 and 400 degrees at their maximum settings.

Electric woks cater to the “quick and easy” trend in home cooking. By combining the pan with its own source of heat and using materials requiring no special cleaning or treatment, these woks update a traditional cooking method for the modern kitchen. You can, in theory, cook anything in an electric wok you can make in a regular wok with less work caring for the pan before and after.

How to Cook in an Electric Wok

Using an electric wok doesn’t differ much from regular wok cooking aside from how the heat is controlled. For best results with traditional stir-fried foods, make sure your ingredients are prepped and ready before getting started. Foods cook very quickly at high heat, and it’s easy to burn your meal if your attention is drawn away. Use fast stirring and tossing motions to keep the food moving as you cook.

Preheat the wok before adding oil unless the instructions advise otherwise. Referred to as “hot wok, cold oil,” this is considered the best method for stir frying. Use an oil with a high smoking point to avoid damaging the fats or starting a fire. Add protein foods first, and push the finished pieces up the sides of the pan before cooking vegetables. Use wooden utensils so that the surface of the pan doesn’t get scratched. Serve finished dishes right away to prevent burning or charring.

If you’re not in the mood for stir fry, you can also use your wok to:

• Roast or smoke foods • Steam vegetables or dumplings in a bamboo steamer basket • Cook breakfast foods, including French toast

A wok is also handy whenever you need to make a large amount of food at once or want to batch cook dishes to freeze and eat during the week.

Electric vs. Stovetop: Which Wok is Better?

Traditionalists say low temperature settings and uneven heating means electric woks will never win out against time-tested carbon steel stovetop woks, but many people debate if stovetop woks used in home settings are any better because of how difficult it is to heat a wok to appropriate temperatures for stir frying using a regular burner. You won’t be able to rock the pan of an electric wok from side to side or lift it to toss the food because the pan locks into the base during cooking, and some models are made from materials not suited for preheating without oil or cooking liquid.

There may not be a truly concrete answer to the debate, however. Whether using an electric wok is better than cooking on the stove depends on the meals you want to make and how “authentic” you like your cooking experience to be. If you want to cook your favorite takeout dishes at home or approximate classic stir fries without a lot of hassle, an electric model can do the trick. Electric woks also let you enjoy this unique way of cooking without the need for large burners or an ample amount of stove space. Being able to extend your cooking area can be helpful if you entertain frequently or cook meals for a large family.

Pros and Cons of Electric Woks

Electric woks have benefits and drawbacks when compared to traditional wok pans. Consider the differences in light of what you want your wok to be able to do, and use those personal preferences as a guide when you shop.

Pros • Some models have the capacity to reach very high temperatures • Units are portable and can be used anywhere with an electric outlet • Easy to clean in the dishwasher, with dish soap or with a damp cloth • Versatile cooking methods for every meal • Makes wok cooking accessible to busy families and amateur home chefs • No need to season the pan, meaning you can use it immediately after cleaning the first time • No extra stove space necessary to cook additional food when entertaining

Cons • May take longer to cook meals because of temperature cycling in the heating element • Heat level isn’t steady and may drop unexpectedly during cooking • Requires a significant amount of counter space for cooking and cabinet or shelf space for storage • Electric elements require extra care and attention to remain in working order • The pan may not be suitable for stovetop cooking if the electric element breaks • Teflon coatings on some pans aren’t generally recommended for high-heat cooking • Unless otherwise specified, nonstick coatings may contain potentially harmful chemicals • Price may be significantly higher than a traditional wok

What to Look for When Buying an Electric Wok

The biggest consideration when purchasing a traditional wok is usually the material from which the pan is made, but there’s more to look for when shopping around for an electric model. Most electric woks are either stainless steel or aluminum with a nonstick coating. Some materials are more durable than others, and you want a unit built to last. User reviews reveal potential drawbacks and flaws of each model and are invaluable when trying to find a wok with the features to meet your needs.

As you compare different aspects and the information from reviews, look for an electric wok with:

• A high maximum temperature • Multiple heat settings for cooking a variety of foods • Quick cooking speed for authentic stir fries • User-friendly controls to adjust temperature • A base designed to remain cool to the touch when in operation • Even heating and heat cycles during cooking • Safety features for the heating element • Accessories, including a steamer, clear glass lid and appropriate utensils • Heat-resistant “helper handles” • Versatile flat-bottomed construction • Chemical-free nonstick coating for models with nonstick pans • Enough room for the largest meals you plan to cook

If speed and convenience are the main reasons you want an electric wok, ease of care is also an important feature. Some parts may need to be removed before washing because the electric elements could become damaged if accidentally submerged, and not all pans can be put in the dishwasher. Care instructions should be listed for each wok. If not, you may be able to find the information on the manufacturer’s website or the user questions section of the online product listing.

If you decide to invest in an electric wok for your kitchen, check out multiple models before buying. Compare features based on your preferences, cooking style and the number of people for which you prepare food on a regular basis. Make sure you have the room to store an electric model and are able to care for it according to the instructions.

Electric woks may not compare to their stovetop counterparts in every respect, but many people find them useful because of the versatility and flexibility offered by pairing the pan with its own heat source. Because of the diversity of cooking methods and the wide range of meals you can prepare, an electric wok can be a useful addition to your kitchen collection.
