Introduction

Fillet knives are specialty tools with long, flexible blades and handles with well defined grips. While fillet knives work in a lot of settings, they're most commonly used for cleaning and filleting fish. Both carbon steel and stainless steel can be used in the construction of filleting knives. Carbon steel is easier to sharpen to the best edge; stainless steel offers better corrosion protection.

Knives and Cleaning Fish

When cleaning a fish, you'll want to focus on a couple of things for the safest results: 1) You want to cut the meat away from the bone by relying on the knife tip to ride above the bones, rather than through. This is where it's critical to keep your knife extremely sharp. 2) Your knife will need an easy to control grip so you don't slip and fillet yourself! 3) Avoid using a knife that's too long. A large knife can make a small fish hard to manage, but a short knife can be used to fillet a larger fish if you peel back the fillet as you slice.

Features of the Knife

Grip

Cleaning fish is a messy process, so you need a fillet knife with a textured handle. Experts recommend a Micarta handle. Even though Micarta is a plastic, it's a layer of fabrics and fiberglass. Best of all, once it's wet, Micarta has an almost tacky feel. This handle will give you great grip no matter how wet or slimy it gets.

Many knives with standard plastic handles have well-formed grips, and a wooden knife will wear to suit your hand after years of use. If you find fillet knives with silicon sleeves, be aware that they will offer you a good grip. However, take care to clean these knives well to avoid any build-up of offal or cast-off material between the handle and the silicone sleeve.

Blade

Avoid any fillet blade that claims it never needs sharpening. The process of filleting means you're delivering fish to diners that has no bones. It's not hard to cut through fish bones; a bit of pressure will do it. If you keep your knife blade nice and sharp, you won't have to apply pressure and can deliver boneless fish to the plate

Suit the knife to the fish. Short knives make filleting small fish much easier. A long knife can be more of a hindrance than a help. Take care to find a blade with a flared, slightly curved tip. This tip is the lead cutting tool as you remove fillets from the outer flank of the fish, so keep it sharp!

Protective Gear

Working with a very sharp knife can be a hazard, but the fish itself may prove dangerous. Sharp spines can poke you and may break the skin. Experts in the field recommend investing in Kevlar gloves to make it easy to grip the fish, avoid spiny hazards and protect yourself from the knife edge.

The Knives

Camping and outdoor supply stores are a great place to start when looking for the best fillet knife. Every fisherperson is different, so plan on spending some time handling the handles. You want a knife that fits will in your hand and feels balanced. A short blade with a hearty handle may be the best option for freshwater weekend fishing; if you're headed out to sea, it may be time to invest in a set.

Dick's Sporting Goods Mustad KVD Pro Fillet Kit

The Mustad Kit also feature three knives. It also comes with a steel rod sharpener and cutting board. This kit folds up flat but not necessarily small. The blades are a bit thicker than the standard fillet knife, giving you plenty of sharpening space. While the smallest knife is a bit straight for a fillet knife, the two larger blades offer a lovely flared tip, very necessary for the deboning process.

Maintenance

Keeping your knives sharp and free of corrosion is critical for any fishermen. Experts with The Fishing Line suggest sticking with tried and true methods including a double sided aluminum oxide stone. You will want to keep the stone wet.

The sharpening process changes the bevel or angle of the blade. The process of manual sharpening really takes a lot of focus. You need to watch the blade for burrs, monitor the amount of water on the stone, and listen to the blade as it crosses the stone.

Remember, your goal when sharpening your fillet knife (and really, any cooking knife) is to get a consistent, sharp edge. Dull knives require pressure and force; it's easier for things to go wrong when you're pushing down on the handle than if you're cutting smoothly. Can you cut yourself with a sharp knife? Absolutely! However, it's much easier to maintain control of a sharp knife.

Great knives are an investment. If you're buying for the long term, take the time to visit stores and handle the knives. Dedicated cooks may have long avoided knives with plastic handles; try them anyway. Filleting a large batch of fish can be a long, arduous and messy process, so whether you're fishing every day or just on the weekends, you will need a knife that fits great in your hand and is easy to grip.
