Once seen only in restaurant kitchens, mandoline slicers are proving to be an indispensable tool in home kitchens. If you are new to cooking, a mandoline is a manual food slicer that cuts, cubes, juliennes, dices and more, quickly turning fruits and vegetables into miniature works of art.

Food preparation is a breeze with mandoline slicers, but for devices whose sole purpose in life is to cut food, they come in a dizzying array of styles. If you’re almost ready to buy but aren’t sure what features make a mandoline great, read on for everything you need to know about this popular kitchen gadget.

Types of Mandolines

There are two basic styles of mandolines, hand-held and those equipped with a stand. Both styles are equally effective, but each has its pros and cons.

Hand-held mandoline slicers have a handle on one end and are braced against a countertop, bowl, or cutting board as the user slides food down a platform, or carriage, with an integrated blade. These low-profile models are lightweight, easy to control and without a stand in the way, can store flat in a kitchen drawer.

A mandoline with a stand, however, can be used with just one hand. The legs elevate the slicer, holding in place on the countertop and cut slices simply fall to the surface below. Models with stands take more space to store, but require less strength when making thick specialty cuts.

Blades

Mandolines come with either fixed or interchangeable blades. Fixed blades are permanently attached to the unit and cannot be replaced. They are usually adjustable for different thicknesses, but will be limited in the type of cuts they can make. Interchangeable blades allow the user to switch blades for different types of cuts as well replace them when they get dull.

Interchangeable blades make a mandoline more useful, but the blade assortment that comes with the unit may not necessarily make the desired shapes. Better makers typically offer a variety of blades that can be purchased separately, but will add to the cost of the slicer.

Blade Shapes

Mandolines traditionally had straight blades, but are now available with diagonal or v-shaped blades. Straight blades are ideal for slicing dense, rigid fruits and vegetables like carrots or potatoes, but fall short with flexible produce such as tomatoes and peppers, leaving them crushed against the blade’s edge.

If you’ve tried a mandoline with a straight blade in the past and felt like it was too limited to warrant taking up valuable kitchen space, a model with a diagonal blade may change your mind. Because the blade is positioned at an angle, it nips at the food a bit at a time as it travels down the carriage, making clean cuts with foods of any texture. V-shaped blades are similar to diagonal blades in functions, but since they cut on both sides, slicing is faster.

Blade Material

The best mandolines blades are made of stainless steel or ceramic. Stainless steel, the most popular blade material performs well, but needs to be sharpened regularly and replaced when it no longer holds a sharp edge.

Ceramic blades stay sharper longer, but can’t be sharpened and are more expensive to replace. Without meticulous care, they’re prone to getting fine nicks in the blade, resulting in irregular cuts. Fans however, point out that ceramic blades don’t have to be replaced as often and they don’t contribute to oxidation that turns fruit brown like stainless steel can.

Body Construction

The body of a mandoline slicer is typically made of plastic, steel, or some combination of both materials. Plastic bodies are lighter, less expensive, easy to clean and some are dishwasher safe, but they can also feel flimsy and light-colored models may stain over time when used to slice foods with strong pigments such as red beets.

Stainless steel is heavier, making it sturdier against the pressure exerted when slicing hearty foods, however, most models must be hand washed.

Food Holder

Mandoline blades are exceptionally sharp and to keep hands safe, they come with a hand-held grip that holds food against a set of small spikes while it’s moved over the blade. Some are solid and made to slip onto rails on each side of the mandoline as the piece of food being sliced gets smaller. This is a popular safety feature, but it can fail if the holder slips off the rails, a common finding among those using this style.

Other styles are made with retractable pins on the inside that hold longer chunks of food inside the holder and don't depend on rails for safety. A good food holder is the sole barrier between your fingers and the blade. It should fit your hand well and feel secure while it moves.

Adjustability

The adjustability of the blade depth determines the thickness of the cuts that can be made. The simplest mandolines are limited to a few popular sizes, but for most home cooks, only a few are really necessary. For salads that rival your favorite café’s, the more options the better.

Hand-held mandolines typically have a slide mechanism on the handle that changes the blade depth. While this allows the user to adjust the blade quickly and easily, because the slide is on the handle where your hand will be during use, it’s more likely to shift out of place accidentally.

Mandolines on a stand usually have an adjustment knob on one side. There is less probability of shifting, but to make salads for four when different cut thicknesses are needed, it takes a little longer to make the size switch.

For general positioning, hand-held types are the easiest for the user to manage. Stand models are limited in adjustability to whatever the components permit. If the legs don’t allow an angled position, there is no real option to achieve that since the balance and safety of the unit depend on the proper use of the stand.

Recommendations

A mandoline slicer not only saves time prepping food, it can create artful cuts that enhance the presentation of food, while ensuring ingredients are consistently cut, helping your favorite dishes cook evenly. For the minimalist home chef, either style of mandoline will achieve good results, but if the focus is on saving time and simple slices will do, consider a hand-held model. It fits in a drawer, sets up quickly, cleans easily and gets consistent, if simple results.

If the kids want waffle fries, a stand model is best. This type of cut takes a firmer push to get a clean cut and a hand-held model won’t handle that kind of use. Look for a user-friendly model made of the sturdiest plastic or stainless steel.

Helpful Tips

- Cleaning a mandoline immediately after use eliminates most staining. If it’s still a concern, look for plastics in black or red. - For slicing tomatoes and peppers, choose a mandoline with a diagonal or v-shaped blade. - Cut large vegetables into smaller sizes before slicing. It will improve the stability of your grip while slicing. - Look for a stand model with a non-skid base. If the preferred model doesn’t have that, put the slicer on a silicone baking mat while slicing. - A few new models are designed to make cuts in both directions, cutting slicing time in half! - Warranties average a year across the board, but models come and go. Buy from a company with a solid market presence and purchase needed accessories before newer models are introduced. - Integrated storage that keeps blades together and organized are a plus.

If you’ve purchased kitchen gadgets before that are collecting dust now because they performed poorly or are too cumbersome to use, keep that in mind as you make a buying decision. Mandoline slicers have endured the test of time as a kitchen must-have, but ultimately, the best mandoline is the one you are comfortable enough with to use every day.
