Wine Saver Buying Guide

When you drink half a bottle of wine, it’s rarely as fresh over the next few days as it is that very first pop. You probably stick it in the fridge, but you just never quite get that magic back, do you?

Older wines can ruin in as little as a few hours while newer wines begin to lose distinct flavor notes over the next day or two. Merely putting the cork back in the bottle doesn’t slow the process at all.

The good news is that there are more professional ways of preserving wine than just forcing the cork back in and hoping for the best. If you’re not quite a sommelier, we’ve answered a few questions you might have about how they work and which one is right for you. Let’s take a look.

Why Have A Wine Saver

When you open the bottle, you remove the seal that prevents air from getting into the bottle. During the bottling process, air is removed, and the bottle is corked preventing oxidation from souring the wine.

Air isn’t necessarily the enemy. Opening the bottle "opens" the wine as well, so that it has its intended notes and flavors, but that window is short. Once you’ve opened it, you’re on a clock.

Wine savers or preservers have two primary forms, but there are some different things you might consider within those categories.

Preservation Method

There are three different methods of preserving wine once you’ve opened the bottle. You can remove the air out of the bottle and reseal it. You can add inert gas back into the bottle so it won’t interact with the wine or you can pour the wine into a smaller glass container and reseal it so that there’s no air between the wine and the new cork.

Hand pumps

Hand pumps are the easiest and usually the cheapest preservation method. There’s a rubber stopper that fits into the mouth of the bottle. Once sealed, you pump the hand pump a few times to remove the air from the container.

It’s mind-blowingly simple, and it’s suitable for preserving wine overnight. If you’ve got a few glasses worth left, the pump method is a small investment with good results. If you plan to keep the wine for longer periods of time, it’s not as reliable. It’s also easy to bump the seal open as you’re handling the bottle.

Valve Releases

These are similar to the hand pump because they also rely on the removal of oxygen to work. Valve releases work a bit like a balloon. Insert the mechanism into the cork and inflate to form a tight seal at the opening. The valve slowly releases the air remaining in the bottle until there’s no oxygen left.

It does seal the bottle evenly, so it’s more likely to fit in the fridge without adding extra height. However, the seal doesn’t usually hold very well. It takes about three days before you have to re-pump the seal.

Inert Gas

It’s a weird experience using cans of inert gas for the first time. It feels like the bottle is empty, but it’s filled with a gas that doesn’t interact with the wine to ruin the flavor.

Read the instructions thoroughly first. Spray the inert gas in the bottle using the straw attachment in a specific set of spray lengths. Quickly seal the bottle back. This method has the best chances of preserving wine long term, but you should practice a few times with this method before trusting your more precious stash of wines.

Don’t Open The Bottle

One of the newest methods of preserving the wine is never to open it at all. A needle mechanism inserts into the cork and siphons in inert gas allowing wine to pass back out. The needle is so small that the cork seals again around the opening making it as if you never opened the bottle at all. Technically, you didn't.

Replacing the siphoned wine ensures that no oxygen makes it through the seal and that the wine is consistently in an environment where nothing interacts. Some early users have claimed that these mechanisms preserve wine for months, but they are the most expensive.


If you find that you drink leftover wine within a day or two and you don’t usually buy expensive wines, buying a several hundred dollar wine saver might not be the best idea. You don’t need anything fancy to preserve that $20 bottle until tomorrow when you use the rest to flavor a dish (or to make cooking it go down more easily).

If you’re a serious collector and want to preserve bottles of wine that are older, more complex, and more volatile, investing in a more expensive and reliable method of saving wine helps protect your investments. Consider what wine you’re preserving and for how long before deciding that money is no object.

A Note About Preserving Sparkling Wines

You should never pump sparkling wines because you’ll lose the carbonation. The best method for these is to seal the bottle back up using a stopper that holds the seal firmly in place to preserve the gasses inside.

Storing Preserved Wine

It doesn’t matter what method you use to save the bottle. Once it’s opened, you can’t store the wine on its side again. Storing white wine is best in the fridge because of the composition of the grapes, but it’s best to save reds on the counter (away from any sunlight or open heat source including vents). Temperature fluctuations will ruin any resealing you’ve done with the bottle, so pay attention to placement.

If you find you always have extra bottles on hand, spending a few bucks for a basic hand pump sealer will keep that wine from always going bad. You don’t have to choke down ruined wine just because it’s around.
